Organic semi-whole semolina pasta The semi-whole semolina pasta is obtained from an ancient wheat variety of Tuscan origin, known as "Cappelliā€ wheat. It is characterised by high digestibility, never having undergone the genetic alterations of modern agriculture. It has a high content of resistant starches and nourishes better and more completely thanks to the higher content of fibre, polyphenols, wheat germ and vitamins.
