For over thirty years, our commitment to healthy and sustainable food, rooted in tradition and respect for the land, has been at the heart of our collaboration with Slow Food. Through our participation in the Mercati della Terra in Fiesole and Mercatale Val di Pesa, we continue to promote a short, transparent, and high-quality supply chain every month. This perfectly aligns with Slow Food’s values: food must be good, clean, and fair.

These principles are the guiding light for every stage of our artisanal pasta production.

The pursuit of excellence begins with the careful selection of the finest raw materials, essential to ensure a short supply chain that reflects our values. Every stage of production is meticulously managed, with particular focus on slow drying at low temperatures (never exceeding 38°C).

This approach not only preserves the nutritional and organoleptic properties of the pasta but also aligns with Slow Food principles, emphasizing respect for natural processes and authentic quality.
