Due to a temporary difficulty in sourcing Tuscan wheat that meets our quality standards, part of our semolina is milled not only in Tuscany but also in Marche and Umbria, using organic wheat of Tuscan and Italian origin.

100% Tuscan Organic Semolina Pasta

The pasta is made from organic semolina derived from 100% Tuscan wheat, selected for its quality of gluten rather than quantity.

The grains are milled by trusted mills that never heat the wheat during milling, preserving the organoleptic properties of the semolina.

All Fabbri pasta undergoes a meticulous drying process at temperatures strictly below 38°C. This ensures that the wheat’s flavor is preserved and gives the pasta an exceptional ability to absorb sauces.
